How to Make African Peanut Butter Stew With Chicken

Things You'll Need
- 1 tbsp. olive oil
- 13-pound roasting chicken (cut into pieces)
- 1 chopped onion
- 1 large diced potato
- 1 crushed garlic clove
- 1 tsp. ground cumin
- 1 tsp. ground coriander seed
- 1 tsp. ground black pepper
- 1 tsp. crushed red pepper flakes
- 1 tsp. salt
- 1 cup water
- 15-ounce can of garbanzo beans
- 3/4 cup of peanut butter

Put olive oil in a skillet. Heat the oil over medium-high heat. Place a lid over the oil to prevent it from splashing out onto the stovetop.

Place the roasting chicken in the pan. Cook the chicken until it browns. Remove it from the pan.

Turn the heat down to medium-low. Add the onion, potato and garlic clove. Saute these vegetables until they caramelize.

Add the ground cumin, coriander seed, black pepper, red pepper flakes and salt to the vegetables.

Stir the roasting chicken back into the pan. Add 1 cup of water to the pan. Replace the lid and simmer the stew for 10 to 15 minutes.

Remove the lid and add the peanut butter and garbanzo beans. Replace the lid and simmer for an additional 10 minutes. The stew is finished cooking once the potatoes are tender and the chicken is cooked.

Substitute the vegetables in the stew with your favorites.
Add 2 cups of tomatoes to the stew to create a soft texture.
