How to Cook a Cabbage Roll Made From Rice Paper Wraps

Things You'll Need
- 2 medium grated carrots
- 1 cup snow peas
- 8 spring onions
- 1/2 yellow capsicum
- 1/4 green shredded cabbage
- 1 lemon
- 1 tbsp. fish sauce
- 30 leaves Vietnamese mint
- 30 sheets rice paper
- Cutting board

Grate the carrots. Slice the snow peas, spring onions and capsicum lengthwise.

Shred the green cabbage and place it in a bowl. Add the juice of 1 lemon and the fish sauce to marinate the cabbage.

Place the rice papers in cold water to soak. Add twp to three rice papers at a time, and allow them to soak for two minutes. Remove the rice papers, and place them on a wet towel. Use the rice papers once they are completely soft.

Sit on rice paper on a cutting board. Add one to two slices of each vegetable, one tsp. of carrot and green cabbage and one mint leaf on the edge of the paper. Do not overfill the rice papers.

Begin to roll the rice papers. Tuck in the edges and slowly roll one end of the paper to the other end.

Sit the rice paper rolls on a tray. Serve them at room temperature or while they are cold.

You can use substitute the vegetables with your favorite choices.
Make a quick dipping sauce by combining the juice of one lemon, one chopped clove of garlic, one red chopped red chili, one tablespoon fish sauce and a tiny sliver of fresh ginger.
Bake the cabbage rolls in the oven at 325 degrees until they are crisp. Brush them with olive oil to ensure they do not burn.
