How to Make a Large Quantity of Pizza for a Group/Crowd of about 20

Feeding a large group of people and need easy recipes for a crowd? I'm including several and this one is for making Pizza Dough for Pizzas. It is enough dough for TWO 18 X 26 X 2 inch pans. It would feed approx. 20 people depending on how big you cut the slices and how many slices they each eat. Don't forget to serve a salad buffet too. Also Check out my other recipes for crowds. You don't have to worry about doing the math. It is done for you. Go to a Food Warehouse or Food Club to purchase your large quantities like Sam's Club, Gordon Foods, or other places. You can often sign up for an account and they can give you discounts for large quantity purchases. If you are a not-for-profit organization, you can maybe get special discounts or other deals. Call ahead to make sure they have everything you need or in case you need to pre-order. Read through everything before getting started.

Instructions

Things You'll Need:

  • 1 1/2 quarts warm water (105 to 115 degrees)
  • 6 T. yeast
  • 2 T. salt
  • 4 1/2 quarts of flour
  • 1 C + 2 T. Oil
  • TWO 18 X 26 X 2 inch pans
  • # 10 Cans of Pizza Sauce
  • Toppings, including Mozzarella
  1. Step 1

    Put 2 quarts of the flour, add the salt and yeast into a large industrial sized mixer. Mix for 1 minute. Add the warm water and mix for 5 minutes; then add the remaining flour and the oil. Dough needs to be slightly sticky. Let set in mixer until double in size.

  2. Step 2

    Punch down dough and divide into 2 parts. Spread into TWO sprayed 18 X 26 X 2 inch pans. Par Bake crusts for 10 minutes in a 375 degree convection oven so pizza sauce won't make crust soggy.

  3. Step 3

    Remove pans from oven and cool. Add Pizza sauce and toppings. This makes TWO 18 X 26 X 2 inch pans. This can be done ahead of time.
