Things You'll Need:
- 6-8 chicken legs
- 1 ½ onions (we like onions)
- 2 ½ cups of frozen mixed vegetable
- 1 can cream of chicken soup
- 4 Pillsbury deep pie shells
- Note: if using leftover turkey. You will need a small can of chicken broth
-
Step 1
Wash the chicken well
Put in a large pot, add water so that the chicken is all under water, add season salt, garlic, add onions 1 cup of the onions, Note: leave ½ cup of onions to cook with the vegetable. Cook chicken legs until tender. After the chicken is done let cool then pull chicken off the bone, break the chicken into small bit size pieces. Set aside. -
Step 2
Pour most of the chicken broth off to the side. Leave just enough to cook the vegetables with.
Note: If making turkey pot pie just replace the chicken with the leftover thanksgiving turkey. -
Step 3
Add vegetable, onions, and cream of chicken soup to the vegetable. Let cook until veggies are done.
Note: your filling should not be runny.
After the vegetables are done add in the chicken. Set aside. -
Step 4
Prepare your crust.
Preheat the oven to the oven to 375 degrees. For the bottom crust only, I usually pre cook so that it does not turn out soggy. Bake for 10 minutes only. If you are make 2 pies you will need 4 crusts. One pie crust goes on bottom and one goes on top.
This receipe should make two pies. -
Step 5
Once the pie shells are done you can pour the filling into the cook pie shells. With the remaining two pie shells they should be room temperature so that you can lay them on top of the chicken/vegetable filling. Be sure to vent the crust.
-
Step 6
Bake the chicken pot pie or turkey pot pie at 350 degrees for 25 - 30 minutes.
Enjoy!
