How to Maintain Quality in Mass Food Production

Creating a quality dish in a home kitchen or test kitchen is a relatively easy task. Reproducing that same dish hundreds of times for mass production takes planning and adherence to standards. Every item in a dish must be recreated in the same exact way every time, so attention to detail is more important the more times you create a dish. Consistency is the key to maintaining high quality along with high volume.

  • Use the same exact quality ingredients every time you make the dish. Purchasing ingredients on sale may save money at first, but skimping on quality can only hurt your finished product.

  • Maintain your equipment. Do daily checks on operating systems and hourly checks on temperatures. Any variance in machinery should be repaired as quickly as possible.

  • Clean everything in your facility on a constant basis. High quality food can only be created in absolute cleanliness. Prevent cross-contamination and unknown items from being added to recipes by keeping a neat kitchen.

  • Measure and weigh every ingredient, every time. Consistency is the key to maintaining the quality of the food. Recipes should be posted in a prominent place.

  • Package food so it will hold consistent temperature. Keep moist foods covered to prevent them from drying out. Constantly rotate food to ensure the oldest food is the first to be sold.
