How to Use a Wusthof Knife Sharpener
All knives require maintenance and occasional sharpening to maintain their usefulness. There are a few rules for maintaining your blade; always cut on a wood or plastic board because other hard surfaces will dull your blade on contact. You can also dull your blade by cutting frozen food, slicing into bones or using your knife to pry things open. But even if you avoid all of these pitfalls you will still need to sharpen you blades periodically. Wusthof makes a great handheld sharpener that is inexpensive and easy to use. How to Use a Wusthof Sharpener

Place your sharpener on a flat work surface, perpendicular to your body. Hold the handle of the sharpener in one hand and the knife you are planning to sharpen in the other.

Place the blade of the knife into the slot at a 90 degree angle. With slight pressure on the blade, pull the knife towards you. Take the knife out of the sharpener and repeat 4 to 5 times. Never take the blade back and forth across the sharpener; it will just dull the blade.

Some Wusthof sharpeners have two stages. One carbide (or coarse) which sets the edge, the other ceramic (or fine) that finishes the edge. Use the same technique on both, always using the coarse side before the fine.

Tips & Warnings
For routine maintenance, 4 or 5 strokes should do the job. If your knife is particularly dull, additional strokes may be needed to achieve the desired edge.
