How to Cook Prime Rib in a Pan

- Prime rib roast
- Cajun seasoning (optional)
- Plastic wrap
- Rock salt or coarse sea salt
- Aluminum foil
- Roasting pan
- Meat thermometer

Determine the size of the prime rib roast needed. An average rule to follow is two servings per rib, for example, a three-rib roast should yield six servings.

Purchase the roast within 24 hours of the desired cooking time. Prime rib should not be frozen prior to cooking to ensure the best flavor and tenderness of meat.

Season the roast by rubbing Cajun seasoning or desired herbs over the entire surface. Cover with plastic wrap and refrigerate one hour. If no seasoning is desired, proceed to step 4.

Coat the entire surface of the prime rib with salt. Loosely cover with aluminum foil and let stand at room temperature for one hour.

Preheat oven to 500 degrees F. Place roast, boneside down, into roasting pan. Insert thermometer into center of roast.

Cook in the oven for six minutes per pound. Turn off the oven without opening the oven door, and let the roast stand for two hours before removal. The thermometer should read 140 degrees F when you remove the pan from the oven.

Tips & Warnings
Remove the rib cap by slicing along the bone, and then slice roast to desired thickness. Meat should be medium rare. Individual slices may be broiled to reduce pinkness.
Serve prime rib with au jus and horseradish. Accompany the meal with a side salad and steamed vegetable of choice. Add bread and a good wine, and you have a delicious meal right at home.
