The crab season begins in October and November in the United States every year. Crabs are low calorie food, high in protein, and omega-3 fatty acids. Most notably, they are rich in chromium, which helps lowering the blood glucose levels in our body by regulating sugar. Why not try an Asian style seafood pancake? Instructions
  1. Step 1

    Gather and prepare the items for the Asian crab and green onion pancake:

    -- For the Pancake --
    * 2 cups all-purpose
    * 2 large eggs
    * 1 bunch chopped or sliced green onions, both white and green parts
    * 2 cups real crab meat, fresh and picked
    * 2 cups water
    * 1 tablespoon vegetable oil
    * Salt and freshly ground black pepper, to taste

    -- For the Dipping Sauce --
    * 1/4 cup light soy sauce
    * 2 cloves garlic, peeled and finely chopped
    * 1 tablespoon green onion, finely chopped
    * 1 teaspoon sesame oil
    * 1/3 teaspoon sugar
    * 1 teaspoon chili paste, or 1/2 teaspoon dried red pepper flakes
    * 1 teaspoon white vinegar, optional

  2. Step 2

    Mix flour, eggs, and water until smooth in a large bowl. Add more water if needed, to get a thin pancake batter.

  3. Step 3

    Fold in half of the chopped green onions into pancake batter. Sprinkle with salt and pepper, if desired. Set aside for about 15 to 20 minutes or until set.

  4. Step 4

    Add vegetable oil to a frying pan over medium-low heat. Pour batter into the pan, tilt and swirl pan to coat pan bottom with batter.

  5. Step 5

    Add crab and the remaining green onion to the cooking batter. Cook batter for 6 to 8 minutes or until set. Flip and cook the other side for additional 6 to 8 minutes. Transfer crab and green onion pancake to a large plate.

  6. Step 6

    Make the dipping sauce. Mix red pepper flakes (or chili paste), garlic, green onion, soy sauce, sugar, vinegar (optional) and sesame oil in a small bowl.

  7. Step 7

    Slice pancake into pieces like a pizza and serve with dipping sauce. Makes about 8 large slices of crab and green onion pancake.
