Instructions

    • 1

Combine the kosher salt and black pepper in a mixing bowl. Rub the seasoning over the roast beef until it is completely covered.

    • 2

Allow the roast beef to sit at room temperature for 30 minutes. Do not leave the roast beef out longer than 2 hours to avoid the risk of harmful bacteria.

    • 3

Preheat the gas grill to 300 degrees. Brush olive oil over the grill grates to prevent the roast beef from sticking.

    • 4

Set the roast beef on the hottest part of the grill. Sear both sides of the beef for 7 to 10 minutes on each side. You want both sides to have nice even sear marks.

    • 5

Turn off one of the gas grill burners. Leave the remaining burners on, but turn them down to medium to cook the roast beef indirectly. Be sure that the roast beef is sitting on the burner that you turned off previously.

    • 6

Insert a cooking thermometer inside the grill. Ensure that the thermometer continues to read 300 degrees. Regulate the temperature by using the grill vents, and keep the lid closed.

    • 7

Check the temperature of the roast beef. The internal temperature needs to be at 150 to 165 degrees. Leave the meat thermometer in the roast beef to continue to check on the beef's temperature.

    • 8

Remove the roast beef from the gas grill when it reaches the desired internal temperature. Let the roast cool for 15 minutes before cutting and serving the meat. Cut the beef against the grain.

Tips & Warnings

  • Freeze leftover roast beef in an airtight container.

  • Slice the roast beef very thin to use the beef for sandwiches.
