How to Roast a Turkey in Your Rival Roaster

Things You'll Need
- Thawed turkey (approximately one pound of bird for each quart of roaster space)
- Rival electric roaster
- Instant meat thermometer
- Seasonings to taste (garlic, lemon, rosemary, thyme or poultry seasoning)
- Butcher's string (if the turkey is not already trussed)

Rinse the turkey with cold water and truss it if needed. Season it as desired.
In addition to seasoning the outside of the bird, try lifting the skin on the breast to insert cloves of fresh garlic, thinly-sliced lemons, and rosemary sprigs for extra flavor.

Turn the roaster to 375 degrees. Once it has preheated, place the turkey into it breast side up.
According to Rival, the bird should be cooked for 13 to 18 minutes for each pound. Keep close tabs on your turkey throughout cooking to ensure that the inside reaches a minimum temperature of 155 degrees inside the breast by using your instant meat thermometer. For an 18 pound turkey, this means it will cook for approximately 4 hours and 30 minutes.
There is no need to baste the turkey while it cooks in an electric roaster because the lid will prevent the steam from escaping, which will keep the meat moist and tender.

Remove the turkey and place into another roasting pan once the internal breast temperature reaches 155 degrees and place the bird into your conventional oven at 375 degrees uncovered for an additional 20 to 30 minutes, or until the inside of the breast reaches 160 degrees.
This step ensures a crisp, golden skin.

Remove the turkey from the oven and let it rest on the counter for another 30 minutes, checking frequently until the internal temperature reaches 165 degrees.
The turkey will continue cooking for about 30 minutes after it is removed from the oven, so you will need to remove it before it reaches 165 degrees.

Reserve the drippings to make gravy. Carve your turkey and serve!
