Instructions

    • 1

Choose ripe limes that feel soft and heavy. Key limes are popular for margaritas if you have a choice; they are yellow when ripe. They are also smaller than the green Persian limes you are used to seeing in supermarkets.

    • 2

Cut the limes in half. Put one half into your hand-held lime squeezer if you have one, and squeeze the juice into a mixing bowl. If you do not have a squeezer, you can simply squeeze with your hand or press and turn a spoon into the lime. With either of the latter two methods, pour the juice through a strainer to remove the seeds and pulp.

    • 3

Sweeten the lime juice either with regular granulated sugar or with a simple syrup. Simple syrups are often used in cold drinks because granulated sugar does not dissolve fully. To make the simple syrup, add 1 cup of water to 2 cups of sugar in your pan and put the mixture on the stove to heat. Once the sugar dissolves and the liquid begins to boil, you have your simple syrup. The longer you cook it, the more concentrated your syrup will be.

    • 4

Add the sweetener slowly to the lime juice and taste along the way. The sugar is used to cut the acidic, or tart taste of the lemons. Once that bitter taste is gone, you have added enough sweetener.

Tips & Warnings

  • In terms of amounts, it will depend on how sweet your simple syrup is. Start with a 3 to 1 ratio of lime juice to simple syrup. Add slowly from there. If you are using granulated sugar, start with 1 tablespoon of sugar for each cup of lime juice.
