Bison SteakWhen eating Bison meat you are consuming a highly nutrient dense food because of the proportion of protein, fat, minerals, and fatty acids to its caloric value. Ounce for ounce, bison has only about 1/4 of the fat beef has, is more unsaturated than beef, is much higher in iron. Studies at major universities confirm that Buffalo meat is very high in the essential fatty acids, have an excellent ratio of Omega-3 to Omega-6 acids and contain much more CLA (Conjugated Linoleic Acid) than was known. CLA which is an Omega-6 polyunsaturated fatty acid, or "good fat" enhances the body's ability to promote a healthy metabolism.
