A pot of beans and cornbread on a cold winter night is just the thing. Since many people today work and do not have time to cook beans the traditional way---all day---using a pressure cooker is a convenient and quick way to enjoy home-cooked beans. Pressure cookers cook beans and other food under high pressure, which cuts the cooking time down significantly.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Pressure cooker
  • 1 cup dried navy beans
  • 1 tbsp. vegetable oil
  • 1 clove garlic, crushed
  • 1 bay leaf
  • ½ tsp. oregano
  • Large bowl
  1. Step 1

Inspect the dried beans and remove any pebbles, clumps of dirt or bad-looking beans. Rinse the beans well and soak them in water for at least six hours. If you are soaking 1 cup of beans, use 3 cups of water for soaking. The beans will absorb the water and reduce the cooking time.

  2. Step 2

Add 3 cups of fresh water to the pressure cooker. Drain the beans and add the drained beans to the pressure cooker; discard the soaking water. Add the remaining seasonings to the beans.

  3. Step 3

Place the lid on the pressure cooker according to your manufacturer's directions. All pressure cookers work a little differently, so be sure to follow the directions on your pressure cooker.

  4. Step 4

Bring the pressure cooker up to 10 pounds of pressure and cook the beans 10 to 16 minutes, or cook them 5 to 8 minutes at 15 pounds of pressure.

  5. Step 5

Remove the pressure cooker from the burner and allow the pressure to drop inside the cooker. Do not remove the regulator at the top of the pressure cooker before it stops rocking. This is the indicator to let you know when the pressure has lowered sufficiently to open the pressure cooker.

  6. Step 6

Remove the lid from the pressure cooker and serve the beans. If they are not soft, or you cannot taste the seasonings very well, place the cooker on the stove and continue cooking the beans without a lid for approximately 15 to 20 minutes.
