How to Cook With Caja China

La Caja China is a company that produces large roasting boxes capable of roasting whole pigs up to 100 pounds. These roasting boxes are referred to as La Caja China grills and can also be used to roast large quantities of any type of meat, poultry or fish. Whole pigs require approximately 3 hours and 40 minutes to cook so plan ahead when you roast pork. Does this Spark an idea?

  • Pig, gutted and dressed for cooking
  • Self light charcoal

Instructions

    • 1

      Sandwich the pig between the two racks of the La Caja China grill with the rack handles facing out. Secure the racks together with the four included S hooks.

      Place the drip pan in the bottom of the roasting box. Place the pig, secured between the racks, into the roasting box on top of the drip pan.

      Place the ash pan on top of the box and cover it with the charcoal grid. Spread self lighting charcoal evenly over the charcoal grid.

      Light the charcoal and note the time.

      Add regular charcoal, not self igniting, to replace the charcoal that has burned away after one hour. Repeat this after one more hour and then after 30 minutes so that you add additional charcoal three times during the cooking process.

      Use potholders to remove the charcoal grill by its handles from the top of the La Caja China grill. Set the grill onto the long handles of the roasting box.

      Remove the ash pan and set it aside. Grasp the handle of the rack on top of the pig and pull it up to flip the pig over.

      Cut the skin of the pig with a knife in several locations. This will help make the skin crispy.

      Replace the ash pan and the charcoal grill. Cook the pig for an additional 30 minutes or until the skin has reached your desired degree of crispiness.
