Most things that have three or more ingredients are considered a casserole, but this is not a traditional green bean casserole. Vegetables from the garden compliment each other as they cook down in the kettle and a little bacon seasoning makes the dish taste all country! You have never tasted green beans quite like this before. Country-style green beans are an excellent potluck dish for family gatherings.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 quart of home canned green beans
  • ½ cup chopped yellow onion
  • 1 cup of quartered potatoes
  • ½ cup crisp bacon bits
  • 2 tablespoons of bacon grease for flavoring
  • Salt and pepper to taste
  1. Step 1

In a stewing pot, add the quart of home-canned green beans. You can substitute store bought green beans, they will work just as well.) Add in ½ cup of yellow onions and 1 cup of quartered potatoes with or without the skin. Cook over medium-high heat on the stove.

  2. Step 2

While the other vegetables are cooking, fry 4-6 strips of bacon in a frying pan. Cook the bacon until crisp. Remove and place on a paper towel. When cooled crumble and add to the cooking mixture on the stove. (Some people cut up uncooked bacon and add into the pot from the start. This is optional.)

  3. Step 3

Add 2 tablespoons of the bacon drippings to the pot of vegetables and salt and pepper to taste. Cook until the potatoes are tender when poked with a fork. Then it is ready to serve.

Tips & Warnings
  • You can omit the bacon grease and salt if you prefer.
