Shrimp is the second most popular seafood in the United States. While shrimp is high in cholesterol, it is also rich in omega-3 fatty acids, vitamin B12, protein, selenium (a cancer fighting agent) and naturally very low in saturated fat. Cholesterol level from eating shrimp is not increased because it is balanced out by the omega-3 fatty acids.

"Good shrimp" -- kind of an oxymoron. People are told to eat shrimp for health benefits even it's high in cholesterol. However, in a published report by the American Journal of Clinical Nutrition after studying, the percent increase of bad cholesterol (LDL) from consuming shrimp was much lower than previously believed. Instructions
  1. Step 1

    Gather and prepare the following for the shrimp sauté in tomato sauce recipe:

    (Ingredients)

    -- Main --
    * 1 pound fresh, or frozen thawed medium-size shrimp (32-40ct./lb.), cleaned, shelled (but leave tail shells intact), and deveined
    * 5 whole cloves garlic
    * 1/2 cup chopped green onions
    * 1/2 cup torn and divided baby spinach leaves
    * 2 medium size tomatoes, diced
    * 1-1/2 tablespoons cornstarch
    * 1-1/2 tablespoons warm water
    * 2 tablespoons cooking oil

    -- Tomato Sauce --
    * 1-1/2 cups vegetable broth
    * 1/3 cup ketchup
    * 1/2 teaspoon salt
    * 1 tablespoon sugar
    * 1 tablespoon rice wine or sherry
    * 1/2 teaspoon ground ginger
    * 1 teaspoons ground basil leaves

  2. Step 2

    Mix the cornstarch with 1-1/2 tablespoon water. Stir until cornstarch dissolves in water, set it aside.

  3. Step 3

    Blend all the ingredients for the tomato sauce in a large bowl. Reserve.

  4. Step 4

    Sauté garlic in cooking oil in frying pan over high heat until fragrant, about 20 seconds, or until garlic turns brown. Discard garlic and reserve oil.

  5. Step 5

    Stir fry shrimps in hot oil, about 1 minute or until pink on all sides. Transfer shrimps to large plate. Turn heat down to medium.

  6. Step 6

    Pour tomato sauce into frying pan and cook until heated and slightly thickened. Once the sauce is thickened, return shrimps to cook.

  7. Step 7

    Add cornstarch-water mixture to the cooking ingredients, stirring. Fold in the diced tomato and green onions. Sauté for 1 more minute.

  8. Step 8

    Remove tomato shrimp from heat and place on a large plate. Sprinkle top with torn baby spinach leaves. Enjoy shrimp sauté in tomato sauce on a bed of cooked rice or paste.

    Recipe serves 4 persons.
