How to Sear and Oil Chicken Before Baking

Searing chicken before baking involves browning the chicken in hot oil on the stove top and then placing the chicken into a moderate oven and finishing the cooking process at a longer and lower temperature. By searing the chicken prior to baking it, the meat browns attractively, and flavors activate on the surface of the chicken that enhance the overall taste of the chicken.

Instructions

Things You'll Need:

  • Chicken (cut up pieces)
  • Salt and pepper
  • 2 tbsp. olive oil
  • Frying pan (oven-safe)
  • Tongs
  • Oven
  • Meat thermometer
  1. Step 1

    Preheat the oven to 325 degrees F.

  2. Step 2

    Measure the olive oil and pour it into the frying pan. Place the frying pan onto the stove top and set the burner to high.

  3. Step 3

    Watch the oil as it heats. Just before it is hot enough to smoke, add the chicken pieces to the frying pan.

  4. Step 4

    Sear the chicken on the first side until it is brown and then use the tongs to flip the chicken to the other side. Sear the chicken on the second side until it is brown.

  5. Step 5

    Move the frying pan from the stove top to the oven. Bake for 15 to 20 minutes until the chicken has an internal temperature of 165 degrees F.

Tips & Warnings
  • Pour 4 oz. of white wine over the seared chicken before placing it in the oven to add flavor and to deglaze the stuck-on chicken from the frying pan during the baking process. After removing the frying pan from the oven, remove the chicken and place the frying pan back on the stove top. Set the burner to medium-high and stir the liquid ingredients with a wooden spoon until the liquid reduces by approximately half. Pour over the chicken to serve.
