Step 1
Select your fresh yams so they will be about the same size. My recipe is for one, but you can cook as many as you want to, so each dinner guest has their own candied yam. Cooking time might be slightly longer if you cook more than one at a time, so please keep that in mind.

Wash, under running while brushing with a stiff vegetable brush to remove all dust and dirt from the skin.

Pierce the skin several times all over the surface of your fresh yam with a sharp knife.

Place in center of the microwave cooking on high setting for 10 minutes. If your microwave does not have a turn table, rotate yam after 5 minutes, being careful since it will be hot.

Using a pot holder, remove cooked yam and slice, length wise down the entire yam skin.

Spread each half with butter or your favorite table spread. Add table salt, black pepper and sprinkle with brown sugar creating your syrup topping.

Step 7
Serve hot to each of your guests for a Thanksgiving or Christmas treat. Enjoy the skin where many nutrients await.
