How to Make Goat Cheese and Cucumber Sandwiches with Mixed Herbs and Watercress
Goat cheese and cucumber sandwiches with mixed herbs and watercress are a new take on the classic English cucumber sandwich so commonly seen at high tea and as appetizer at formal parties and dinners. Things You'll Need
- 8 slices whole wheat bread
- 12 oz. chevre goat cheese, room temperature
- 3 tbsp. finely chopped fresh parsley
- 2 tbsp. chopped fresh tarragon
- 2 tbsp. finely chopped fresh chives
- 1 tsp. grated lemon zest
- ½ tsp. coarse ground black pepper
- English cucumber, very thinly sliced
- Bunch of watercress

Make rounds out of the bread by placing a 2 1/4 --inch round cookie cutter into the bread slices.

Place the goat cheese, parsley, tarragon, chives, lemon zest and coarse ground black pepper into a resealable plastic bag. Close the bag and squeeze to combine all the ingredients.

Transfer the herbed goat cheese from the plastic bag to a small mixing bowl. Using your hands, form the herbed goat cheese into a log about the diameter of the bread slices.

Slice the goat cheese. Put a goat cheese round on top of each bread round. Place two thin cucumber slices on top of the cheese and press gently. Top with a few sprigs of watercress and close the sandwich. Repeat this process with the remaining rounds.

Transfer the sandwiches to a large serving platter and serve.
