  • 6 oz. chevre goat cheese
  • 8 slices walnut bread
  • 3 tsp. fresh basil leaves, minced
  • 3 figs, pitted
  • 1/2 tbsp. extra virgin olive oil
  • Nonstick cooking spray
  • 16 campari tomatoes, halved

      Spread the chevre onto 4 slices of bread and top each one with 1/4 of the fresh minced basil.

      Place the pitted figs in small bowl and add the extra virgin olive oil. Mash the mixture with the tines of a fork to form a very thick paste. Spread the paste over the other 4 slices of bread. Close the sandwiches and coat all sides of the sandwiches with nonstick cooking spray.

      Heat a large nonstick skillet over medium heat and add two sandwiches. Press gently on the tops of the sandwiches with a spatula and cook for 2 to 3 minutes on each side or until the bread is lightly toasted. Repeat this process with the remaining sandwiches.

      Transfer the sandwiches to individual serving plates or a large serving platter and scatter the halved campari tomatoes around the sides. Serve immediately while piping hot.
