How to Bake Creamy Rice
Rice is a staple that should be in every kitchen pantry. But, having simple rice dishes every night can get boring. This recipe not only kicks up the flavor of rice, it can be a standalone meal for your family. Does this Spark an idea?
Things You'll Need
- Large skillet
- 1 tbsp. olive oil
- 2 tbsp. low-fat butter or margarine
- 2 cups chopped scallions
- 3 cups cooked rice
- 1 8oz. carton sour cream
- ¾ cups ricotta cheese
- ½ tsp. black pepper
- ½ tbsp. garlic powder
- 1 cup mozzarella cheese
- ½ cup provolone cheese
- 2-quart baking dish
- Cooking spray
- Aluminum foil

Preheat oven to 350 degrees F. Put skillet on stove over medium heat.

Add 1 tbsp. of olive oil and 2 tbsp. of butter into skillet, and let the butter melt. Once the butter is melted, toss in 1 cup of chopped scallions. Cook scallions for about three to four minutes. Turn off the heat.

Add 3 cups of cooked rice, sour cream and 3/4 cups of ricotta cheese to the scallions. Sprinkle with a 1/2 tsp. of pepper, a 1/2 tbsp. of garlic powder, 1 cup of mozzarella and a 1/2 cup of provolone cheese. Mix until the ingredients are incorporated.

Spray baking dish with cooking spray. Spoon rice mixture into the baking dish. Cover baking dish with aluminum foil and bake in the oven for 35 to 40 minutes.

Remove the dish from the oven and let it cool, covered, for about 10 minutes. Uncover and top with the remaining scallions. Scoop out onto plates and serve hot.

Tips & Warnings
Cheddar or Monterey Jack cheese works just as well as mozzarella.
