How to Get Bromelain From a Pineapple

Bromelain is a protein-digesting enzyme that is found in the stem and core of the pineapple fruit. This digestive enzyme is used in many supplements, health treatments and some skin care products. Bromelain helps to exfoliate and rejuvenate the skin. In order to use bromelain, it must first be extracted from the pineapple.       Use a sharp knife to remove the outer skin of the pineapple. Cut the pineapple into small chucks, including the stem. This is where the most concentrated form of bromelain is found.

      Puree all the pineapple chunks by running them through a juicer. Filter the juice by pouring it through a cheesecloth to remove any remaining pulp.

      Store the fresh bromelain in an airtight container in the freezer at a temperature that is below -4 Celsius. This is necessary to retain the enzymatic activity of the bromelain. Keep it stored in this manner until you are ready to use it.

  • Remove and discard any damaged, soft or discolored pieces of the pineapple; these are all signs of rotting.
