A simple chicken dish to prepare for the holidays, particularly for those looking for a poultry recipe other than turkey. Basic and easy to make roasted stuffed chicken recipe >>

Instructions
  1. Step 1

    Gather and prepare the items for the stuffed roasting chicken recipe:

    (Ingredients)
    * One 5 to 7 pounds roasting chicken
    * 1/4 teaspoon dried thyme leaves
    * 1-1/2 cups hot water
    * 3 tablespoons butter, cut into small pieces
    * 6 ounces stuffing mix for chicken
    * Salt to taste (optional)

  2. Step 2

    Discard innards (heart, gizzard,... etc.), if any. Wash chicken thoroughly under running water and pat dry with paper towels. Rub chicken on the outside with salt, optional. Set aside.

  3. Step 3

    Mix in a large bowl the dry stuffing mixture for chicken, 1-1/2 cups hot water and butter in. Mix until butter is melted and stuffing is moistened.

  4. Step 4

    Stuff lightly the chicken cavity with stuffing mixture. Close openings tightly with kitchen string and skewers (or toothpicks).

  5. Step 5

    Place chicken breast-side up on rack in large baking pan. Brush with chicken exterior with melted butter, if desired. Sprinkle all over with dried thyme.

  6. Step 6

    Roast chicken at 325°F for 3 to 3-1/2 hours (approx. 20 minutes/pound) or until chicken is fully cooked. Basting with more butter during roasting, if needed. Serves 4, ingredients can be easily doubled.
