How to Make Black Bean and Corn Salad

Healthy salads don't have to be just lettuce and salad dressing. There are a number of healthy salads that can be make just as easily as your regular garden salad and can also be just as healthy. When it comes to the black bean and corn salad your dropping the calories and fat that would normally be in salad dressing and eating protein and healthy fats instead. So enjoy!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 Cup of defrosted corn
  • yellow pepper
  • green pepper
  • red pepper
  • 1 15 ounce can of black beans
  • 1 yellow onion
  • 5 stems of green onions
  • 3/4 Cup of vinegar
  • 1/4 Cup of olive oil
  • 2 cloves of Garlic
  1. Step 1

    Prepare your ingredients: Cut your red, green, and yellow peppers into bite size pieces. Quickly running them through a food processor can be an easy way to do it if your not fond of chopping. You can also do this with the yellow onion to cut down on the crying while chopping onions. Drain and rinse your can of black beans an pat dry. Mince your green onions and garlic.

  2. Step 2

    Mix ingredients: Put 1 Cup of corn, peppers, black beans, onion, green onions, cider vinegar, olive oil, and garlic all in one large bowl and stir thoroughly.

  3. Step 3

    Put salad in the fridge to chill for the day and enjoy!
