Instructions
  1. Step 1

    Gather and prepare the following ingredients for the Christmas ginger almond cookies recipe:

    * 2 cups all-purpose flour
    * 2 teaspoons ground ginger
    * 1/2 teaspoon baking soda
    * 1/4 teaspoon ground allspice
    * 1 tablespoon almond powder or 1-1/2 teaspoons pure almond extract
    * 1/4 cup butter, at room temperature
    * 1/2 cup packed brown sugar
    * 2 large egg whites
    * 2 teaspoons pure vanilla extract
    * 1/5 teaspoon ground cinnamon
    * 1/4 teaspoon salt
    * 2 tablespoons minced crystallized ginger

  2. Step 2

    Lightly grease cookie sheet with cooking spray or butter and set aside. Preheat oven to 375°F.

  3. Step 3

    Blend sugar and butter using electric mixer on high speed until light and fluffy. Stir in the egg whites plus vanilla extract, blend well.

  4. Step 4

    In a large bowl, whisk together the flour, baking soda, ground ginger, almond powder (or extract), cinnamon, allspice, and salt. Gradually add this mixture to the butter mixture in Step 3. Mix well until combined to form cookie dough. Add the crystallized ginger, blend well.

  5. Step 5

    Lightly flour a work surface. Roll the cookie dough flat out into a 1/4" thick sheet using rolling pin. Cut dough with a cookie cutter of your desired shape and size. Use different cutter sizes and shapes (i.e. stars) for a more fun and interesting visual effect.

  6. Step 6

    Arrange ginger almond cookies single layered on the prepared cookie sheets. Place them at least 1" apart. Use more cookie sheets if needed. Bake for 6 minutes or until the cookie edges are golden brown.

  7. Step 7

    Remove Chistmas ginger almond cookies from heat. Cool on the sheets for 5 minutes and then transfer to wire racks before serving. Great as a snack, dessert/treat and breakfast item.

    Yields 24+ Christmas ginger almond cookies depending on your cookie cutter size and shape.
