How to Make Roast Gravy

Whether you have baked a roast (beef or pork) in the oven or simmered it in a slow-cooker, you will definitely want to make delicious gravy to go with it. Perhaps you have tried to make your own gravy, but it came out lumpy or too thick or too thin. Perhaps you have tried serving store-bought gravy from a jar or powder mix, but found that your family didn't enjoy it.   • 2 qt. saucepan
  • Roast drippings (juices)
  • 1/4 cup butter or margarine
  • 1/4 cup all-purpose flour
  • Spoon or whisk
  • Salt and pepper

      On medium heat, melt 1/4 cup of butter or margarine. Stir constantly to avoid burning the butter or margarine.

      Sprinkle 1/4 cup of all-purpose flour directly into the melted butter or margarine. Stir to combine, and allow the mixture to cook for approximately 1 minute.

      Slowly ladle in about 1/8 cup of roast drippings (juices). Stir slowly to thoroughly combine.

      Ladle in another 1/8 cup of roast drippings, stirring to combine. Continue to repeat the action of ladling and stirring to combine until your gravy has the desired consistency.

      Add salt and pepper to your lump-free gravy to taste.

Tips & Warnings

  • If your diet requires limited salt intake, you can use a salt substitute.

  • If you find you have run out of drippings before reaching the desired consistency, simply add water or canned beef or chicken broth.

  • This technique can also be used to create delicious, lump-free country (white) gravy, substituting milk for meat drippings.

  • Be very careful when ladling hot roast drippings into a hot saucepan. Ladle and stir slowly to avoid splashing hot liquid onto skin or clothing.
