How to Store Roasted Peppers

Roast peppers when they are in abundance and freeze them for later use. Many different types of peppers can be prepared this way, each with different flavor and heat profiles. The most popular varieties for roasting and freezing are green and red bell peppers, Anaheim peppers, jalapeno, anchos and poblanos. Roasting deepens the flavor and adds a smoky note that complements the heat. Freezing roasted peppers alters the texture slightly, but not enough to be noticeable in most recipes. Things You'll Need

  • Peppers
  • Broiler, grill or gas burner
  • Bowl
  • Plastic wrap
  • Wax paper
  • Airtight container
  • Freezer

Instructions

      Roast peppers over a gas flame or in the broiler until the skin blisters and turns black. Turn the peppers to roast all sides. Place the roasted peppers in a bowl and cover them plastic wrap for 5 to 10 minutes or until cool enough to handle.

      Hold the pepper down and peel the skin off. Slice the pepper open, remove the seeds and stem. Slice the pepper into strips.

      Place the smoked peppers in a single layer on a piece of waxed paper or plastic wrap. Stack the peppers with waxed paper or plastic wrap between each layer and place in an airtight container or plastic bag.

      Store the roasted peppers in the freezer for up to 9 months. Use in any recipe where roasted peppers are desired.
