How to Preserve Apple Slices

"An apple a day keeps the doctor away"---remember that? There's a lot of truth in that simple phrase. According to the George Mateljan Foundation for the World's Healthiest Foods, apples are fantastically good for your heart and lungs, and studies show that they lower cancer risk and help regulate blood sugar. So eat up. And if you want to keep an abundance of apples handy for snacking or baking, these easy tips will help you preserve all that healthy goodness.

Instructions

Things You'll Need:

  • 1/2 tsp. ascorbic acid crystals
  • 1500 mg vitamin C
  • Mortar and pestle
  • 2 cups cold water
  • Saucepan
  • 1 packet powdered pectin
  • 1 cup cold water
  • 1 3/4 cups lukewarm water
  • Freezer-safe containers

    Refrigerator Preservation

  1. Step 1

    Crush 1/2 tsp. ascorbic acid crystals or 1500 mg vitamin C (not chewable or time-released) with a mortar and pestle.

  2. Step 2

    Dissolve the powder in 2 cups cold water.

  3. Step 3

    Bathe your apple slices in the solution for 10 to 15 minutes. Cover and store in the refrigerator.

  4. Freezer Preservation

  5. Step 1

    Combine 1 packet powdered pectin and 1 cup cold water in a saucepan.

  6. Step 2

    Place over high heat and boil for one minute. Remove from heat.

  7. Step 3

    Add 1 3/4 cups lukewarm water and cool completely.

  8. Step 4

    Slice apples directly into the pectin syrup. Store in freezer-safe containers, and place immediately in the freezer.

Tips & Warnings
  • Do not slice your apples ahead of time---they will begin to brown immediately. Prepare your solutions first, then slice the apples.
