How to Cook With Spring Form Pans

Springform pans are round pans that have a latch on the outside. When the latch is released, the vertical wall detaches from the bottom of the pan, lifting away from the baked goods inside. Springform pans are necessary for baking tortes or cheesecakes, which are too delicate to be lifted out of a traditional cake pan. By removing the pan from the cake, rather than the other way around, your cake stays intact.

Things You'll Need:

  1. Step 1

    Line the bottom of your springform pan with a round piece of parchment paper. This will allow you to easily lift your cheesecake or torte away from the base of the pan after baking. It will also keep the bottom of your pan clean. Use a scissors to trim the parchment paper to fit the pan's base.

  2. Step 2

    Check that your pan is assembled and the latch is closed before you add any batter. Bake your cake or torte according to the directions in your recipe. There is no need to adjust temperature or baking time for your springform pan.

  3. Step 3

    When the cake is done, remove it from the oven and allow it to cool in the pan. You will need to touch the metal latch to release your pan, so the metal and cake inside should be cooled.

  4. Step 4

    Release the latch on the outside of the springform pan and lift the pan away from the cake. Opening the latch will create a gap in the pan's wall, which will loosen the edges and allow you to easily remove the top portion of your pan.

  5. Step 5

    Slide the cake or torte off the pan's base and onto a serving dish. The parchment paper should help the cake slide away from the pan.

Tips & Warnings
  • If you do not need to reuse your pan immediately, you can leave the cake or torte on the base of the springform pan for serving. This eliminates the need for parchment paper, and you don't need to slide the torte off the pan's base.
