A nutritious and tasty soup to enjoy for adults in cold nights. This is also a good chance to use turkey if you have any leftover from Christmas. Add some wine into the soup mix and have it over the New Year's to celebrate. Drunken turkey and cabbage soup recipe >>

Instructions
  1. Step 1

    Gather and prepare the following ingredients for the drunken turkey and cabbage soup:

    * 2 cups cooked corkscrew pasta (refer to package instructions)
    * 4 cups shredded; thinly sliced cooked turkey breast meat
    * 6 cups turkey or chicken broth
    * 6 ounces frozen green peas
    * 6 ounces frozen cut carrots
    * 1 medium yellow or white onion, peeled and coarsely chopped
    * 6 cups shredded; thinly sliced cabbage
    * 1 teaspoon salt
    * 1/4 teaspoon freshly ground black pepper
    * 1/3 teaspoon garlic powder
    * 1/2 teaspoon dried thyme
    * 1 teaspoon dried chopped parsley leaves
    * Your choice of 1 cup cooking wine or drinking wine (around 13.5% alcohol volume or lower), any brand/flavor
    * 2 teaspoons olive oil

  2. Step 2

    Sauté onion in olive oil over medium heat in a large saucepan until tender, about 8 minutes. Add in the salt, black pepper and garlic powder.

  3. Step 3

    Fill saucepan with 6 cups turkey or chicken broth. Bring ingredients to a boil. Add frozen carrots and peas. Turn down heat and simmer for 10 minutes or until frozen vegetables are cooked.

  4. Step 4

    Add cabbage, turkey, thyme, and wine (1 cup alcoholic drink seems a lot, but half of it will be evaporated in cooking). Cover and simmer for another 5 minutes or until cabbage is cooked.

  5. Step 5

    Ladle soup into serving bowls and top each with parsley. Add noodles to the soup or serve on the side. Enjoy drunken turkey and cabbage soup while hot. Makes 4 servings.
