It's hard to think of summer without imagining the delicious flavor of fresh vegetables. At the height of their season, fresh veggies can be savory and sweet, and it's possible to enjoy them year-round with the right preservation techniques. Fresh snap peas make a wonderful addition to any soup, salad or casserole.

Difficulty: Moderate
Instructions
  1. Step 1

Blanch the peas. Blanching peas maintains their flavor and color. Choose bright and green pods for blanching. Remove all strings and stems from the pods. Prepare a quart of water for boiling. When the water is boiling, submerge the peas into the water for two to three minutes.

  2. Step 2

Prepare the pods for the freezer. After the pods have been submerged for two to three minutes, remove them from the boiling water. If you are blanching several batches of peas, use the same water. Drain the pods in a strainer and place in a large bowl of ice water to cool.

  3. Step 3

Place the snap peas in a large plastic zip-top bag. Seal the bag securely, but make sure to leave a few inches of space at the top of the bag. Label your freezer bag with the date to record the preservation date, and place the peas in the freezer.
