How to Decorate With Sugar Molds
Sugar molds come in many different sizes and shapes. They are made out of materials that can withstand high temperatures necessary for boiled sugar recipes and lollipop syrups. Sugar molds can be used for making individual candies and can also be used for decorating cakes and pastries. Different shapes can be poured into the cavities, in shapes such as jewels or holiday shapes, and can be unmolded and used to decorate cakes, pies and specialty tortes. Does this Spark an idea?
Things You'll Need
- Candy recipe
- Sugar molds
- Pan spray
- Heat-proof candy funnel with stopper
- Coloring or flavoring for candy, if desired
- Confectionery powders, for decoration if desired

Clean and thoroughly dry candy molds. Spray the individual sugar molds with pan spray to prevent the sugar from sticking as the candies set up in the sugar molds. Reserve.

Prepare the hot sugar candy as directed in your recipe. Color and flavor as desired. Remove from heat when the finished temperature is reached, and dip the bottom of the pot into a shallow pan of water to stop the candy from cooking further, and to prevent bubbles from forming from the boiling.

Pour the candy into a heat-proof funnel with a stopper. Begin to fill a sugar mold cavity just to the top of the rim. Stop up the opening of the funnel and release more syrup at the next design. Repeat with each cavity.

Cool the sugar molds until room temperature and invert to unmold the sugar pieces. Brush the sugar molded pieces with confectionery powders if desired, and use to decorate pastries.
