How to Season a Paella Pan

If you own an enameled or nonstick coated paella pan, seasoning the pan is not an issue. If you own a carbon steel pan, then you will need to season the pan in order for it to cook food properly. Seasoning a paella pan is simple and easy and can be done either in the oven or on the stove top. Once seasoned, the pan will require very little maintenance.

Things You'll Need:

  • Cooking oil (peanut or canola)
  • Paper towels
  • Potholders

    Oven Method

  1. Step 1

    Wash and dry the paella pan before seasoning. If the pan is new, place the pan on the stove top and fill with water. Boil for 10 minutes to remove any excess oils, dust and glue residue from the pan.

  2. Step 2

    Preheat the oven to 350 degrees Fahrenheit.

  3. Step 3

    Apply a thick layer of cooking oil to both the inside and outside surfaces of the paella pan.

  4. Step 4

    Place the pan in the oven and cook for 30 to 35 minutes or until the pan has a golden color.

  5. Step 5

    Remove the paella pan from the oven, using potholders, and allow it to cool before using.

  6. Stove Top Method

  7. Step 1

    Ensure that the pan is clean before seasoning. Refer to step one above for cleaning the pan if it is new.

  8. Step 2

    Wipe the inside of the paella pan with a heavy coat of cooking oil.

  9. Step 3

    Place the pan on the stove top and turn the heat to medium.

  10. Step 4

    Use potholders to turn the pan on the stove top until it is a consistent golden color throughout.

  11. Step 5

    Remove the pan from the heat and allow it to cool before use.

Tips & Warnings
  • Always apply a thin coat of oil to the pan after washing. This will help keep it protected from rust.
  • If you use soap to wash your paella pan, it will need to be reseasoned as detergent will remove the existing seasoning.
  • Over time, the paella pan will develop a dark, nonstick film if cared for properly.
  • Reseason your paella pan anytime foods begin to stick to the pan.
  • It is recommended that you use peanut or canola oil when seasoning your paella pan. Olive oil, corn oil and butter will not season the pan properly.
