Many times people, who are new vegetarians, have difficulty transitioning to a vegetarian diet plan. One suggestion is to choose and prepare vegetarian diet recipes that are similar to familiar meat dishes. Meat loaf is a family favorite that can be readily adapted to a vegetarian diet recipe. Here is my vegetarian recipe version of my family favorite. It’s a simple recipe to add to your vegetarian diet menu, high in protein and fiber.

Instructions

Things You'll Need:

  • 12 oz package of vegetarian meat crumbles
  • 1 medium Roma tomato diced
  • ½ medium brown onion diced
  • 1 cup old fashioned oats
  • 2 tbl extra virgin olive oil
  • 1/2 cup jarred spaghetti sauce (or your own homemade)
  • 2 large eggs
  • ¼ cup wheat germ
  • 1 tsp dried red pepper flakes or to taste
  • Salt and pepper to taste

    Place rack in the center of your oven and preheat oven 350 degrees. Lightly oil a standard glass loaf pan, set aside.

    In a large bowl, combine by hand all ingredients EXCEPT for one egg. Mix the vegetarian diet recipe ingredients thoroughly

    Check the texture of the Neat Loaf. It should be moist and somewhat sticky. If it seems a little dry, and does not hold its shape when squeezed in your palm, then add the second egg. Mix thoroughly again.

    Pour your Neat Loaf vegetarian recipe mixture into the prepared glass loaf pan, level the top, then bake for 45-55 minutes or until heated through and browned on top.

    Remove your vegetarian meatloaf from the oven, set on a rack and let rest for about 10-15 minutes.

    Cut and serve with vegetable gravy or mushroom gravy, or the old stand-by: catchup. Enjoy!

Tips & Warnings
  • As an alternative to old fashioned rolled oats, you can add left over brown rice.
  • If you prefer catchup to pasta sauce you can substitute that for this vegetarian diet recipe.
  • Do not over bake!
