How to Make Butternut Squash Soup for the Winter Season

The following soup is easy and simple to make and is great for those cold evenings during autumn or winter, but also makes for a light but filling lunch, and the taste is a little sweeter than your usual soups.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 tablespoons of butter
  • 1 chopped onion
  • 1 large butternut squash (peeled, seeded and cut into small chunks)
  • 6 cups of chicken stock
  • A pinch of nutmeg, salt and pepper
  1. Step 1

    The first thing to do is get a large pot and add the butter and heat over low heat until it is melted, then add the onion and cook for about eight minutes.

  2. Step 2

    Next add the butternut squash and stock and cook over medium heat for a few minutes until the butternut squash gets tender and at this point remove the squash chunks with a slotted spoon and put in a blender for thirty to forty five seconds until it has a smooth texture.

  3. Step 3

    At this point return the blended mix to the pot and stir well over medium heat for another few minutes and add a pinch of nutmeg, salt and pepper to the mix and serve.
