How to Make a Swedish Nut Cake

Swedish nut cake is a delicious treat for holidays or anytime. It's made from scratch, and has a perfect blend of nuts, cream cheese and pineapple.

Difficulty: Moderately Easy
Instructions
  1. Step 1

    Gather and prepare the cake ingredients:

    1 cup of chopped nuts, divided
    2 teaspoons of vanilla extract, divided
    1 3/4 cups of sugar
    2 cups of flour
    2 teaspoons of baking soda
    2 eggs
    1 10-ounce can of crushed pineapple
    1 8-ounce package of cream cheese, softened
    1 3/4 cups of powdered sugar
    1 stick of margarine, softened

  2. Step 2

    Mix 1/2 cup of nuts, 1 teaspoon of the vanilla extract, the sugar, flour, baking soda, eggs and pineapple in a large mixing bowl.

  3. Step 3

    Pour the bake batter into a greased and floured 9X13 inch cake pan.

  4. Step 4

    Bake the cake at 350 degrees F. for about 40 to 45 minutes.

  5. Step 5

    Mix the other 1 teaspoon of vanilla with the cream cheese, powdered sugar and margarine.

  6. Step 6

    Spread the mixture on a cooled cake, then sprinkle with the remaining nuts.
