How to Bake Layered Cakes in Tube Pans

Layer cakes are usually created by dividing cake batter between two or three cake pans of the same size and shape. Tube pans present a problem when attempting to make a layered cake as the pans are often wider at the top than at the bottom so the finished layers may not match up properly. Instructions

      Mix cake batter according to your own recipe or the directions on a box of cake mix. You will need one box of cake mix to create a layered tube cake.

      Spray the inside of a tube pan with nonstick cooking spray. Make sure that you spray the sides of the inner tube in the pan as well to prevent sticking.

      Pour the cake batter into the tube pan. Bake the cake according to the recipe directions. Cakes made in tube pans are generally baked at 350 degrees for approximately 45 minutes, although your recipe may vary due to the density of the cake batter.

      When a knife inserted in the center of the cake comes out clean, remove the pan from the oven with potholders. Insert the knife in the center of the tube shaped cake to test for doneness, not next to the hole in the middle of the pan. Allow the cake to cool in the pan before you attempt to remove it from the pan.

      Run a knife along the edge of the cake to gently loosen it from the pan. Run the knife along the outer edge and the inner edge to avoid breaking the cake. Invert the pan onto a wire rack, and gently tap the bottom of the pan to release the cake.

      Measure halfway up the cake with a ruler, and insert a toothpick halfway into the cake at this point. Continue this process around the outside of the cake, and insert a toothpick every three inches.

      Wrap the ends of a three-foot-long piece of fishing line or dental floss around each hand so that you are holding the line taunt between your hands. Use the toothpicks as a guide, and gently pull the fishing line through the cake towards your body. The fishing line will slide easily through the cake and cut it into layers.

      Carefully slide the top half of the cake onto a large plate. You now have a two layer cake, which you can frost and decorate as you desire.

Tips & Warnings

  • If you would like different flavored layers, use two different cake mixes. Pour half of one cake mix into the bottom of the pan and then half of a different cake mix on top. Carefully set the pan in the oven to avoid mixing the layers.

  • You can create a three-layer cake by placing toothpicks one-third and two-thirds up the cake to divide the cake into three equal layers. Cut the layers apart with fishing line using the same technique as you would with a two layer cake.
