  • 1 lb. fettuccine pasta
  • 3 tbsp. extra virgin olive oil
  • 1/2 cup feta cheese, crumbled
  • Sea salt (to taste)
  • 1 1/4 cups heavy cream
  • 3/4 cup brandy
  • 5 oz. smoked salmon
  • 1/8 tsp. cayenne pepper
  • Coarse ground black pepper (to taste)
  • 2 tbsp. chopped fresh parsley

      Bring a large saucepan of salted water to boil. Add the fettuccine and 1 tbsp. of extra virgin olive oil and cook until al dente, about 9 to 11 minutes. Drain in a colander and return to the saucepan. Add the remaining olive oil and mix to coat. Set aside until needed.

      Pour the heavy cream into a small saucepan and simmer. Pour the brandy into a second small saucepan and simmer. Remove both from heat and mix together with a whisk in a small mixing bowl.

      Cut the smoked salmon into thin strips with a very sharp knife. Add the sliced salmon to the cream and brandy mixture and add the cayenne pepper and coarse ground black pepper to taste. Stir in the chopped fresh parsley and reserve.
