How to Cook Cow Tongue

People who purchase beef in bulk often fill their freezers with quarter- or half-sides of beef. The benefit of purchasing beef in this quantity is that you will have a freezer stocked with a variety of different beef cuts so that you'll always have a plentiful assortment of beef available for cooking. One beef cut that often accompanies a bulk beef purchase is the cow's tongue (also called lengua). If you are feeling brave or adventuresome, you might consider preparing the cow's tongue for a new and different experience. This recipe serves eight. Does this Spark an idea?

Things You'll Need

  • Cow tongue (2 to 3 lbs.)
  • Paper towel
  • Stockpot
  • Cutting board
  • Utility knife
  • 2 green peppers, sliced
  • 2 red onions, sliced
  • 2 tbsp. olive oil
  • 2 cloves garlic, minced
  • Salt and pepper
  • 1 cup grape tomatoes
  • 2 cups corn
  • 2 qt. stockpot with lid

Instructions

      Wash the cow tongue in cool water and dry with the paper towel. Place the cow tongue into the stockpot and add enough water to the stockpot to cover the cow tongue.

      Place the stockpot onto the stove and bring the water to a boil. Reduce the heat and simmer the cow tongue for approximately an hour. Remove the stockpot from the heat.

      Remove the cow tongue from the stockpot and place it on the cutting board. Allow the cow tongue to cool before handling.

      Use the utility knife to cut away all of the skin from the outside edges of the tongue. Trim away any fat , too. Slice the cow tongue into 1/3-inch slices.

      Pour the olive oil into the stockpot and add the peppers, garlic and onions. Add salt and pepper to taste. Set the burner to medium and stir-fry the vegetables until they are tender. Add the sliced tongue and cook for an additional 10 minutes. Add the grape tomatoes and the corn, and cook for an additional 10 minutes or until everything is hot.

      Serve the cow tongue and vegetables immediately.
