Do you need to make something for dessert and you don't have any eggs? Here is a simple recipe for pecan filled cookies that doesn't call for any eggs or any baking powder.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 cup of butter or margarine
  • 1/2 cup sugar
  • 1/2 cup finely chopped pecans
  • 1/2 cup crushed potato chips
  • 1 teaspoon vanilla
  • 2 cups plain flour
  1. Step 1

Soften the butter or margarine in the microwave. Add the sugar and beat until creamy. Add the vanilla and beat again.

  2. Step 2

Add the chopped pecans and crushed potato chips. Beat at medium speed for 2 minutes. Gradually add the flour and beat well after each addition.

  3. Step 3

Place well rounded teaspoons full of the dough on an ungreased cookie sheet, 2 inches apart. Use the bottom of a greased drinking glass, dipped in some more sugar to flatten each cookie to 1/4 inch thick. Re-dip the glass into the sugar after doing each cookie.

  4. Step 4

Bake in 350 degree oven for 10 minutes. Remove the cookies from the pan when done and allow to cool on a plate or rack. I like to add some butter cream frosting after they are cool, but they are delicious plain too.

Tips & Warnings
  • Be careful not to over bake the cookies.
