Step 1
Decide which types of vegetables you'd like to cook and how much of each. Based on this amount, decide which waterless pot to use. The pot should be approximately two-thirds of the way filled with vegetables before you start cooking.

Thoroughly rinse your vegetables. Using your cutting board and knife, slice the vegetables. Try to slice the different types of vegetables approximately the same size, so they cook evenly. Some examples of vegetables you might use include green, red, or yellow peppers, onions, squash, green beans, broccoli, asparagus, and carrots. But you can cook a delicious vegan meal using virtually any type of vegetable.

Place your waterless pot on the burner of your stove, and put your vegetables in the pot. Pour a small amount of water over the vegetables to activate the steam. (Reference 1) The amount of water will depend on which size pot you choose, but generally 1/4 to 1/3 cup should be plenty.

Step 4
Cover your waterless pot with the lid. Make sure the lid forms a tight seal. If you're using the lid that goes with the size pot you're using, this shouldn't be a problem.

Set the heat on your burner to medium, and open the steam valve on your waterless pot. Once the valve begins to whistle, it can be closed, and you should turn the burner down to low heat. Continue to turn the heat lower until you no longer see steam coming out of the pot. You want the seal between the pot and the lid to be airtight. (Reference 1)

Don't open the lid while the vegetables are cooking. You want the steam to remain inside, so the vegetables cook evenly in a minimum amount of time. Most vegetables will take around eight to ten minutes to cook. Generally, darker, non-leafy vegetables with a rich color, such as broccoli, will take the longest to cook. Your cooking time will also depend on how soft you like your vegetables.

Step 7
Once the vegetables are finished cooking, remove the lid from the waterless pot. Allow all the steam to escape, and let the food cool down for 3 to 5 minutes before serving.
