  • 4 turkey fillets
  • 4 oz. prosciutto slices
  • 10 sage leaves
  • 2 tbsp. extra virgin olive oil
  • White onion, very finely chopped
  • 3/4 cup Sauvignon Blanc
  • 3/4 cup chicken stock

      Wrap the turkey fillets in a sheet of plastic wrap and pound the meat with a mallet or rolling pin to flatten it. Cut each of the turkey fillets in half lengthwise.

      Trim the prosciutto slices to fit the halved turkey fillets and place a slice of prosciutto over each one. Put a fresh sage leaf on the top and roll up the meat, securing with a toothpick or kitchen string.
