Things You'll Need

  • 4 tbsp. extra virgin olive oil
  • 1 tbsp. fresh squeezed lemon juice
  • 1 tsp. wholegrain mustard
  • Garlic clove, crushed and minced
  • 1/2 tsp. cumin powder
  • 1/2 tsp. ground coriander
  • 2 ripe tomatoes
  • Medium red onion
  • 16 oz. canned brown lentils
  • 8 oz. canned tuna, drained
  • 2 tbsp. fresh chopped cilantro
  • Coarse ground black pepper (to taste)

Instructions

      Whisk the extra virgin olive oil, lemon juice, wholegrain mustard, garlic, cumin powder and ground coriander in a small bowl and set aside until needed.

      Seed the tomatoes with a spoon and chop them into small pieces. Chop the red onion into very small pieces with a sharp knife.

      Mix the chopped onion, tomatoes and drained lentils in a large mixing bowl and add the tuna. Stir to mix with wooden spoons.

      Add the chopped cilantro to the bowl and pour the dressing over the salad. Season with coarse ground black pepper to taste and mix thoroughly to combine all the ingredients. Serve immediately.
