Step 1
Gather and prepare the following items for the butter and key lime cookies recipe:
(For the Icing)
* 3/4 cup confectioners' sugar
* 1-1/2 tablespoons key lime juice
* 1/3 teaspoon pure vanilla extract
(For the Cookies)
* 2 sticks (about 16 tablespoons) unsalted butter, softened
* 1 cup granulated sugar
* 1 egg yolk
* 1/2 teaspoon salt
* 1/2 teaspoon pure vanilla extract
* 1 teaspoon key lime juice
* 1/2 teaspoon grated key lime zest
* 2 cups all-purpose flour -
Step 2
In a large bowl, cream together using electric mixer on high speed the butter and sugar until light and fluffy. Add the egg yolk and then the vanilla extract. Stir in key lime juice and zest. Fold in the flour.

Shape dough into roughly a 2-1/4" ball and place in a bowl. Cover with plastic wrap. Chill dough for 4 hours or overnight. The dough will expand 2 to 3 times larger than before.

Preheat oven to 375°F. Grease 2 large baking dish with butter or cooking oil, set aside.

Lightly flour a work surface. Roll out dough with a rolling pin to form a 1/4" thin sheet. Use cookie cutter and cut out shapes for the cookies. Recycle the leftover dough after cutting, repeat Step and make more cookies.

Place the cookie doughs on the baking pans. Bake both pans at once in a 350°F oven for 10 minutes, or until slightly browned on the cookies' edges. Remove butter and key lime from heat; cool in pan on wire rack.

Step 7
Combine the confectioners' sugar, key lime juice and vanilla extract in a bowl. Brush cookie tops with icing, or, use a piping bag and squeeze some icing patterns on tops of cookies. Ready to serve.
