Things You'll Need:
- 1 tsp. onion powder
- 3 T. butter
- 2 C. pumpkin puree
- 2 C. chicken broth
- 1 t. salt
- 1/4 t. cinnamon
- 1 T. brown sugar or honey
- 1/4 t. yellow curry
- 1/2 C. fat free half and half

Step 1
Melt butter over low heat in a large sauce pan or stock pot. Slowly stir in onion powder, pumpkin puree, chicken broth, salt, cinnamon, brown sugar or honey, and yellow curry. For extra tanginess, you can add in 2 T. of orange juice concentrate as well.

Step 2
Warm soup over medium low heat, stirring frequently, but do not boil. Remove from heat and stir in half and half.

Step 3
Ladle into bowls and sprinkle with additional curry, if desired. Pumpkin soup is also delicious topped with sour cream--for a fun touch, fill a plastic baggie with 1/2 cup or so of sour cream, and snip off the corner of the bag. Using the bag like a decorative frosting bag, squeeze the sour cream carefully through the hole in the bag to make a design on your soup. Try a swirly pattern or a smiley face!
