How to Make Simple Pumpkin Soup

Things You'll Need
- 1 teaspoon onion powder
- 3 tablespoon butter
- 2 cups pumpkin puree
- 2 cups chicken broth
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 tablespoon brown sugar or honey
- 1/4 teaspoon yellow curry
- 1/2 cup fat-free half and half
- 2 tablespoons orange juice concentrate (optional)

Melt butter over low heat in a large sauce pan or stock pot. Slowly stir in onion powder, pumpkin puree, chicken broth, salt, cinnamon, brown sugar or honey, and yellow curry. For extra tanginess, you can add in 2 tablespoons of orange juice concentrate as well.

Warm soup over medium low heat, stirring frequently, but do not boil. Remove from heat and stir in half and half.

Ladle into bowls and sprinkle with additional curry, if desired. Pumpkin soup is also delicious topped with sour cream -- for a fun touch, fill a plastic bag with 1/2 cup or so of sour cream, and snip off the corner of the bag. Using the bag like a decorative frosting bag, squeeze the sour cream carefully through the hole in the bag to make a design on your soup. Try a swirly pattern or a smiley face!

Tips & Warnings
This is a great recipe to make with kids -- instead of melting the butter in the pan, simply melt it in the microwave. Then let kids add the ingredients and stir. An adult can then heat it in the microwave or over the stove.
