These delicious and elegant almond coconut macaroon cookies are super easy to make. They take only 5 minutes to mix up, and you'll be enjoying toasty coconut almond chewiness in just 25 minutes. These macaroons are a lovely addition to homemade cookie assortments with their beauty and texture.

Makes about 1 dozen coconut macaroon cookies.

Instructions

Things You'll Need:

  • 1 1/3 cups flaked coconut
  • 1/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 2 egg whites
  • 1/4 teaspoon almond extract
  • about 15 plain, whole almonds
  • non-stick cooking spray
  1. Step 1

    Preheat the oven to 325 degrees. Spray an insulated cookie sheet with non-stick cooking spray.

  2. Step 2

    Separate the whites and yolks of two eggs. Put the whites into a small mixing bowl. Briefly swish the whites around with a fork.

  3. Step 3

    Add the coconut, sugar, flour, salt, and almond extract. Stir with the fork to mix together very well.

  4. Step 4

    Use a teaspoon to drop by the rounded spoonful onto the insulated cookie sheet. Press a whole almond into the center top of each macaroon.

  5. Step 5

    Bake for 18-20 minutes, or until just browned nicely. Take them out and let cool on the insulated cookie sheet.

Tips & Warnings
  • The insulated cookie sheets prevent your macaroons from burning. Bakers who tend to blacken their baked goods will all of a sudden become pro bakers when they use insulated bakeware.
  • You can double this recipe for more macaroons.
