Sweet potatoes are almost a must during the holiday season. Whether they are baked, candied or made into a casserole. This sweet potato souffle is a great take-along dish. Can easily be made ahead of time, and then baked at the last minute.

Difficulty: Easy
Instructions
  1. Step 1

    What you'll need:
    3 cups cooked, mashed sweet potatoes
    1 cup white sugar
    2 eggs
    1/2 teaspoon nutmeg
    1 teaspoon vanilla extract
    1/2 cup milk
    1/2 teaspoon salt
    buttered 13x9x2 inch glass or teflon baking dish, do not use aluminum it will leech.

  2. Step 2
    Whip Sweet Potatoes
    Whip Sweet Potatoes

    Whip the sweet potatoes to remove the strings. Mix with the rest of the ingredients in step one. Pour into the buttered baking dish.

  3. Step 3

    For the topping you'll need:
    1 cup brown sugar
    1/2 cup flour
    1 cup chopped pecans
    1/2 stick softened butter
    Combine the above ingredients well. Spread over the sweet potato mixture.
    Bake in pre-heated 400 degree oven for 30 to 40 minutes.
    Or until the top is lightly browned.
    Should serve 10 to 12.
