Make the Best Cheesy Casserole Ever ( Vegetarian Style)

This is such a yummy delicious casserole. Not to mention, it doesn't have any meat! I am not a big meat eater and my husband is a meat and potato king. He loved this recipe and didn't even think about the fact that it was a vegetarian dish!

Instructions

Things You'll Need:

  • 3 zucchini
  • 16 oz. penne pasta
  • 2 cups mozzarella cheese
  • 1/2 cup Parmesan
  • 3/4 cup milk
  • 1 package sliced mushrooms
  • 4 med. Tomatoes
  • 1 Large Onion
  • 2 TBS olive oil
  • Salt & Pepper to taste
  • Ritz Crackers
  1. Step 1

    on medium heat add olive oil to pan. Chop zucchini into quarter sized bites and add to pan.

  2. Step 2

    Chop the onion and tomatoes and add to zucchini. Add Mushrooms and salt and season to taste. Lightly simmer until zucchini and onion is tender.

  3. Step 3

    Meanwhile Cook pasta until almost done and drain. Preheat oven to 350 degrees. add pasta and veggies together then stir in Mozzarella, Parmesan, and Milk. Move mixed dish to a lightly oiled 9x13 in pan. Crush Ritz Crackers over top and cook in oven for 20-25 minutes until it all comes together and the Ritz crackers are nicely toasted. Enjoy!

Tips & Warnings
  • Add some French or Texas Toast and a light Salad for a full meal!
  • Make sure you are of age and fully capable of using a stove top and oven. Dish will be hot when coming out of the oven!
