Things You'll Need:
- 3-5 lb. Rump or Chuck Roast
- Olive Oil
- 2 large cans of Progresso French Onion Soup
- Mushrooms (sliced)
- Tbsp Fresh Minced Garlic
- Tbsp Fennel Seed
- Tsp Dried Basil
- Tsp Dried Oregano
- Fresh Cracked Pepper
- Bay Leaf
-
Step 1
Brown Beef In Olive OilTrim off excess fat, cut the roast into 3 or 4 smaller pieces. Add olive oil to a large pan on the stovetop, place roast beef pieces in pan and brown on all sides. After browning, drain excess oil from the pan.
-
Step 2
Add All Ingredients To BeefAdd all of the ingredients as listed to the beef. On medium heat, bring ingredients to a boil, then reduce heat to low, cover and slow cook for 4-6 hours, or until the roast is very tender and shredable. The last 15 - 20 minutes, you can add sweet or hot peppers if you like for added flavor.
-
Step 3
Shred & Spoon Onto BunRemove bay leaf, and shred the beef, pulling apart with a fork. Using a slotted spoon, place Italian beef on top of your favorite type of sandwich roll or bun. I like to use onion rolls, crusty Italian rolls and Hawaiian bread. When serving, I usually have several types of rolls and buns available to choose from.
-
Step 4
Serve With Au Jus On SideServe the au jus broth on the side for dipping, or sip as a soup along with your Italian beef sandwich. Enjoy!
